Cider 101 is a straightforward cider, it’s made from a blend of various apple juices, few of which are actually cider apples, but we take what we can get from the grower we deal with. The current batch that is fermenting in the cellar would be considered late season juice which means it has more oxidation of the juice and lends more of a bruised apple character to the cider. We ferment at a cool temperature, between 15 and 20 degrees Celsius using an aromatic yeast strain, usually X16 or X5 depending on what I have available. It’s got 27 g/L of residual sugar which makes it sweet and easy drinking.
