In this vintage, winemakers only had one chance at making Icewine as the winter was fairly warm otherwise. We got the opportunity on a Tuesday morning, as large flakes of snow fell and the temperature reminded at a constant -9 °C. The grapes were pressed over a period of 2 days to extract the perfect amount of juice and the ferment took place over several weeks in a stainless steel vessel to control temperature and maintain freshness.
Pale gold colour. Slight notes of candied orange, carried through by caramel and spice. The palate offers honey, mandarin orange, and vanilla notes. It has a beautiful texture, with a clean fresh acidity to balance the sweetness.
Lemon meringue pie, toffee, or poured over ice cream.
